Cleaning up his cellar door, our intrepid winemaker pulled out three-dozen boxes of 2003 vintage Chardonnay-Pinot Noir found squirreled away for a future staff party. The bottles were still under crown-seal, so the wine had been on yeast lees for eleven years. At a clearance sale, I took the lot and headed straight around to Foxey's Hangout to get the wine disgorged. When we popped a cork it was Peninsula fizz of Champagne quality: candied lemon and honey flavours with a lovely bead. The 'Basso Volcano' is a tribute to the winemaker and salutes the power of the ocean and the rich volcanic soils of the region.
